Roast Vegetable Soup Recipe

Ingredients:
- 1 medium butternut squash, peeled, deseeded, and cut into cubes
- 2 red onions, peeled and quartered
- 2 bell peppers (any colour), deseeded and cut into large pieces
- 4 garlic cloves, peeled
- 4 ripe tomatoes, halved
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried thyme or rosemary (optional)
- 1 litre vegetable or chicken stock

Instructions:

1. Preheat Your Oven
- For a conventional oven, preheat to 200°C (400°F). If you're using an AGA, roast in the roasting oven for the perfect caramelisation.

2. Prepare the Vegetables
- Place the butternut squash, red onions, bell peppers, garlic, and tomatoes on a large baking sheet. Drizzle with olive oil, and sprinkle with salt, pepper, and thyme (if using). Toss everything to coat evenly.

3. Roast the Vegetables
- Roast in the oven or AGA for 25-30 minutes, or until the vegetables are golden brown and tender. The garlic will become soft and fragrant, and the edges of the vegetables will start to caramelise, bringing out their natural sweetness.

4. Blend the Soup
- Once the vegetables are roasted, transfer them to a large pot. Add the vegetable or chicken stock and bring to a simmer. Use a stick blender to blend everything until smooth. If you don’t have a stick blender, carefully transfer the mixture to a regular blender in batches.

5. Serve and Enjoy!
- Taste and adjust seasoning if needed. Serve your roast vegetable soup with crusty bread or top with a drizzle of olive oil or a swirl of cream for added richness.
